AIR FRYER BASIL CHICKEN SAUSAGE WITH SWEET POTATOES AND VEGGIES

This air fryer basil chicken sausage with sweet potatoes and veggies is an easy go to lunch. Its packed with fiber and micronutrients.










This is a go to lunch for me. Since I am tracking my macros again. I prep cut all my veggies on Sundays and divide it into containers. Then all I have to do for lunch time is toss it in the air fryer. You can find the Paleo basil chicken sausage at Costco. It comes with two packages. If you don't have a membership to Costco to can swap them out for another chicken sausage. Make sure your sweet potatoes are cut small enough so they will cook all the way through. I also got all my veggies from Costco this time since I was doing a big meal prep.



INGREDIENTS


6 (1 package) basil chicken sausages, sliced

3-4 (432g) bell peppers, diced

3-4 (500g) sweet potatoes, diced

3 (600g) zucchini/squash, diced



DIRECTIONS

  1. Preheat air fryer to 400 degrees F.

  2. Place chicken sausage, sweet potatoes, and veggies in air fryer. If you have smaller air fryer cook in batches.

  3. Cook for 12 minutes on 400 degrees F. Toss half way through.

  4. ENJOY!!
