This air fryer chicken sausage and veggies is a simple lunch or dinner for a busy mom or someone that wants to have a healthy lunch or macro counting. Its packed with protein and fiber and the whole family will enjoy it.

With being a busy mom I love meals that I can throw in the air fryer that are done within 12-15 minutes. Other things I like to do to make my week easier is pre cut all my veggies. Then all I have to do is grab it out of the fridge and toss it in the air fryer.

INGREDIENTS
1-2 (400g) zucchini, chopped
2-3 (400g) bell peppers, chopped
DIRETIONS
Preheat air fryer to 400 degrees. Spray air fryer with non-stick cooking spray.
Add chicken sausage, bell peppers, and zucchini to air fryer and spray lightly with non-stick cooking spray. Season with salt and pepper.
Cook for 12-15 minutes tossing half way through. Make have to cook in batches depending on size of air fryer.
Serve by itself, over rice, or quinoa. (not included in macros)
