Lately I have been eating an apple a day because they are so good and one of m favorite fruits. My favorite apple is a gala red apple.
This week I wanted to make a health treat but not use pumpkin because I've been on a pumpkin baking roll. So I put my two favorite things together apples and cinnamon and made Apple Cinnamon Oatmeal Muffins. I have already made them a couple times and they don't last long. Not only are these muffins great for a snack but you can also use them for breakfast on the go to.
INGREDIENTS
113g (1/2 cup) nonfat plain greek yogurt
100g unsweetened apple sauce
92g egg whites
2 tsp cinnamon
1 tsp baking powder
1/2 tsp salt
120g gala apple, diced
DIRECTIONS
1. Preheat oven to 350 degrees F. Line muffin tin with muffin liners and spray lightly with non-stick cooking spray.
2. In a large bowl, mix together egg whites, greek yogurt, apple sauce, and baking stevia. Add in oats, protein powder, cinnamon, baking powder, and salt. Mix well. Fold in diced apples.
3. Fill muffin liner equally. Place in oven and bake for 30 minutes. Let cool for 5 minutes before serving.
5. Store in refrigerator.
