This Banana Protein Bread is easy to make, moist, and macro friendly. I feel like I am a little behind on posting my banana bread for 2020 but I was busy having a baby when everyone was making banana bread. After having London I was dairy free and start baking with vegan
protein powders and actually love baking with
vegan protein powder more than whey protein
now.
INGREDIENTS
2 (210g) banana
1/2 cup (133g) non fat greek yogurt
100g egg whites
1 whole egg
1/4 cup brown sugar
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
1 tsp vanilla extract
DIRECTIONS
Preheat oven to 350 degrees F, spray a 9 x 5 inch bread pan with non-stick cooking spray.
In a medium mixing bowl, mix together oat flour, coconut flour, protein powder, baking powder, baking soda, salt, and cinnamon. Set aside.
In a large mixing bowl or kitchen aid, mash banana. Mix in whole egg, egg whites, greek yogurt, sugar, and vanilla extract.
Add the flour mixture to the wet ingredients and mix until combined.
Transfer batter to the prepared bread pan, spreading batter out evenly. Cover with aluminum foil. Bake for 30 minutes covered. Remove aluminum foil and bake for another 10-15 minutes or until tooth pick comes out clean.

Can I substitute regular flour for the oat/coconut flours? I don’t have those on hand currently .
