These Cadbury Egg Cookies are made with Kodiak Cakes, Cadbury eggs, and taste amazing.

With Easter being around the corner and everyone loves Cadbury eggs I thought I would make some Cadbury Egg Cookies. When making these cookies make sure your butter is at room temperature.

INGREDIENTS
2 cups (212g) Kodiak Cakes
3/4 cup (144g) sugar
1/2 cup (1 stick) butter, softened at room temperature
2 large eggs
1 tsp vanilla extract
DIRECTIONS
1. Preheat oven to 350 degrees F. Line a large baking sheet with parchment paper. Set aside.
2. In your kitchen aid or with an electric mixer, mix together butter and sugar until fluffy about 2-3 minutes. Add vanilla extract and eggs. Mix well.
3. Add Kodiak cakes to wet ingredients. Place Cadbury eggs in a bag and break into little pieces. Fold Cadbury eggs into mixture.
5 . Use a cookie dough scoop or form into 1 inch balls. Place on baking sheet 2 inches apart to allow room for the cookies to spread.
6. Bake for 9-11 minutes. Remove from oven and transfer to wire rack for cooling.
