CAST IRON SHEPHERDS PIE

Updated: May 26

This Cast Iron Shepherds Pie is so easy to make. It's made with ground turkey, carrots, peas, mashed potatoes, and cheese.

CAST IRON SHEPHERDS PIE

With being a mom I'm always thinking about how I can make a meal still healthy but not have to spend hours in the kitchen. Plus if you have a little one you know you don't get that much time to yourself let alone it's hard to make dinner. London is to the point now that she follows me everywhere and wants to be under my feet when I'm cooking. So to make this meal easier I bought remade mashed potatoes from Target that taste amazing and have minimal ingredients. I also use frozen carrots and peas.

CAST IRON SHEPHERDS PIE

INGREDIENTS

1 pound ground turkey

2 tbsp tomato paste

3/4 cup reduced fat shredded cheese

1 tsp basil

1 tsp garlic powder

1 tsp onion powder

salt/pepper

DIRECTIONS

  1. Preheat oven to 350 degrees.

  2. Heat a 10 inch cast iron skillet over medium heat. Add ground turkey and season with basil, garlic powder, onion powder, salt, and pepper. Cook turkey until no longer pink in the middle.

  3. Add frozen bag of peas and carrots to ground turkey and mix well. Add tomato paste to mixture and mix well.

  4. Heat potatoes as directions on box and then add to the top of ground turkey mixture. Top with shredded cheese.

  5. Place in oven for 20-25 minutes. Broil for 1-2 minutes or until golden brown. (watch closely so you don't burn it)
