I don't know where to start with my love for anything cinnamon. I use to eat a churro almost weekly and found out quick, that they're hard to fit in my macros.
I have been testing a couple different cinnamon muffin recipes but they were either not macro friendly or tasted horrible. But I will say this one is amazing and the first batch was gone within 24 hours. I hope you enjoy them as much as I do.
INGREDIENTS
42g almond flour
16g sugar free fat free vanilla pudding mix
2 tsp baking powder
1/4 tsp salt
3 tsp cinnamon
1/2 tsp vanilla extract
1/3 cup baking stevia
243g egg whites
8oz unsweetened almond milk
45g white chocolate chips
DIRECTIONS
1. In a medium size bowl, mix together coconut flour, almond flour, protein powder, baking powder, cinnamon, jello mix, baking stevia and salt. Set aside.
2. In a large bowl, mix together egg whites, vanilla extract and almond milk. Add dry ingredients to wet ingredients and mix well. Fold in chocolate chips.
3. Fill each muffin liner equally and bake at 350 degrees for 23-25 minutes.
