This Crockpot Chicken Gnocchi Soup is an easy copycat recipe from Olive Garden's Gnocchi Soup. It is packed with protein and taste amazing.









CROCKPOT CHICKEN GNOCCHI SOUP


CROCKPOT CHICKEN GNOCCHI SOUP

INGREDIENTS


1 pound chicken

98g (3/4 cup) celery, diced

104g (1/2) onion, chopped

136g (1 1/4 cup) carrots, shredded

3 cups spinach

2 12oz cans evaporated milk

3 garlic cloves, minced

2 tsp Italian seasoning

1 tsp basil

1 tsp salt

pepper



DIRECTIONS

  1. In a large crockpot add celery, onion, carrots, chicken broth, garlic, and seasoning. Mix well. Add chicken and make sure chicken is covered by liquid.

  2. Cook on low for 6 hours or high for 4 hours.

  3. Remove lid and shred chicken using two forks.

  4. Add one can of evaporated milk to a bowl and mix with the corn starch well. Add to crockpot along with other can of evaporated milk and mix well.

  5. Add gnocchi and spinach and mix. Cook for another 30-45 minutes.

  6. Enjoy.

I think it would work out fine. I would add more liquid though. Cook time maybe 9 minutes. If you try it let me know.
