This Crockpot Creamy Chicken Tortellini Soup is loaded with chicken, veggies, and cheesy tortellini. It's a simple meal that you can put in the crockpot in the morning and have ready after a fun day of fun or work.
You can never have too many crockpot soup recipes and with the freezing cold weather lately here in Utah I love myself a bowl of hot soup. This recipe is macro friendly for all my macro counters.
INGREDIENTS
1 pound chicken breast
1 28oz can fire roasted diced tomatoes
2 Tbsp tomatoes paste
4 cups spinach, chopped
1 8oz package 1/3 less fat cream cheese
1 tsp basil
salt/pepper
DIRECTIONS
1. Place chicken breast, diced tomatoes, chicken stock, garlic powder, basil, salt, and pepper in crockpot. Cook on low for 7-8 hours or high for 4 hours.
2. Remove chicken from crockpot pot and shred using two forks. Add chicken back to crockpot.
3. Add tomato paste, spinach, and tortellini pasta. Mix well. Add cream cheese. Place lid back on crockpot and cook on high for another 15-30 minutes or until pasta is cooked and cream cheese is softened. Mix well after cream cheese has melted. Enjoy!
