Summer is a wonderful season that brings a sense of warmth and joy, and for many people, it also means firing up the grill on a daily basis. One of my favorite summer BBQ meals is the grilled caprese chicken. This dish combines the classic flavors of a caprese salad – fresh tomatoes, creamy mozzarella, and fragrant basil – with the succulent, grilled chicken. The result is a dish that is not only visually appealing with its vibrant colors but also bursting with flavor. The sweetness of the tomatoes, the creaminess of the mozzarella, and the herbaceousness of the basil all complement the smoky, charred chicken perfectly.

INGREDIENTS
1 (100g) tomato, sliced into 4
1/2 tsp garlic powder
1/2 tsp onion powder
1 Tbsp basil, sliced
DIRECTIONS
Clean and preheat grill to 400 degrees F.
If you have thick chicken breast cut in half. Season both sides with Italian seasoning, garlic powder, and onion powder.
Place chicken on grill and cook until no longer pink in the middle flipping once half way through. Top each chicken breast with mozzarella slice and let cook for 3-4 minutes until cheese starts to melt.
Remove chicken from grill and top with tomato, drizzle with balsamic glaze, and sprinkle with basil. Enjoy!
