I would say I am definitely in my cooking era right now. But my main focus is cooking more meals at home from scratch. This Healthy Garlic Butter Chicken definitely hit the spot. I put it over homemade mashed potatoes and it was the perfect meal.
INGREDIENTS
1 pound skinless chicken breasts
1 tablespoon olive oil
4 cloves garlic, minced
1 teaspoon Italian seasoning
Salt and pepper, to taste
DIRECTIONS
Cut chicken into 1 inch pieces. Seasoning the chicken breasts with salt, pepper, Italian seasoning, and paprika. Set aside.
In a large skillet, melt the 1 tablespoon of butter and olive oil over medium heat.
Place the seasoned chicken breasts in the skillet and cook for about 2-3 minutes on each side.
Once the chicken is almost cooked add the other tablespoon of butter and garlic to your skillet. Mix well with chicken.
Place lid on skillet and let simmer for a few minutes.
