This Turkey Hash Brown Egg Bake is my favorite egg bake I have made so far and I have made a lot of them. I love making egg bakes because they're high in protein. Plus when I get up in the morning I don't want to cook.
INGREDIENTS
3 whole eggs
6 slices turkey bacon, cooked and diced (I used Columbus brand from Costco)
2 handfuls spinach, chopped
453g (3 1/3 cups) hash browns (I used Alexia foods)
56g (1/2 cup) reduced fat shredded cheese
salt/pepper
DIRECTIONS
1. Preheat oven to 350 degrees F. Spray a 9 x 13 inch casserole dish with non-stick cooking spray.
2. Add hash browns to the bottom of the casserole dish. Layer with turkey bacon and spinach.
3. In a bowl, whisk together egg whites and whole eggs. Season with salt and pepper. Pour eggs over hash browns, turkey bacon, and spinach. Top with shredded cheese.
4. Bake for 40-45 minutes. Enjoy!
