These Sausage Hash Brown Egg Muffins are only 4 ingredients. They're packed with protein and low in carbs. I love making these for meal prep for the week to make breakfast time easier.
INGREDIENTS
12 eggs
1/4 cup (28g) reduced fat shredded cheese
1 hand ful spinach, chopped
salt/pepper
DIRECTIONS
Preheat oven to 350 degree F. Spray a muffin pan with non-stick cooking spray.
In a medium size bowl, whisk together eggs and season with salt and pepper. Set aside.
In your prepared muffin pan add hash browns to bottom of pan, then sausage, then spinach, then cheese. Then pour eggs whisk eggs over cheese.
Place in oven and bake for 20 minutes.
