DIRECTIONS
2-3 ripe bananas, mashed
1/2 cup sourdough discard
1/2 cup unsalted butter, melted
2/3 cup sugar
2 eggs
1 tsp vanilla extract
1/2 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/2 teaspoon salt
Optional add-ins: chopped nuts, chocolate chips, etc.
DIRECTIONS
Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper.
In a large mixing bowl, combine the mashed bananas, sourdough discard, melted butter, brown sugar, eggs, and vanilla extract. Mix until well combined.
In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
If desired, fold in any optional add-ins, such as chopped nuts or chocolate chips.
Pour the batter into the prepared loaf pan and spread it evenly.
Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Allow the banana bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.
