These toddler Banana Oat Mini Muffins are great for a snack or breakfast for your toddlers. They're made with banana, oats, and honey. Both of my toddlers enjoyed them and asked for more.
If you don't have oat flour on hand you can make it using whole oats. Add whole oats to a blender and blend until it looks like flour. It is also cheaper to do it this way instead of buying oat flour.
**** Remember babies under 1 can not have honey.*******
INGREDIENTS
1 banana
1 egg
2oz milk of choice
1/2 tsp vanilla extract
1/2 tsp cinnamon
1/2 tsp baking powder
DIRECTIONS
Preheat oven to 350 degrees F. Spray a mini muffin pan with non stick cooking spray. Set aside.
In a medium size bowl, mash banana. Add honey, egg, vanilla extract, and milk, mix. Then add oat flour, cinnamon, and baking powder. Mix well.
Add mixture to mini muffin pan. Bake for 9-10 minutes.
Makes 20-22 mini muffins
