I have had a goal lately to make macro friendly family dinners. I get a lot of messages from people saying that they hate cooking 2 meals every night because they think they can't have what their family is eating. So I put together some of my favorite foods and came up with a
Turkey Taco Zucchini Casserole. I hope you and
your family enjoy it.
You can top your casserole with guacamole, diced tomatoes or avocado. Not included in macros.
INGREDIENTS
16oz extra lean ground turkey
1 can black beans
160g taco sauce
1.5 cups cooked quinoa
84g reduced fat shredded cheese
224g zucchini, diced
132g red bell pepper, diced
2 tsp taco seasoning
DIRECTIONS
1. Preheat oven to 350 degree. Lightly spray a 9 x 13 inch baking pan with non-stick cooking spray.
2. Cook ground turkey over medium heat and season with taco seasoning. Cook until no longer pink. Cook quinoa according to package instructions.
3. Transfer ground turkey to baking pan, spreading evenly. Layer with quinoa, taco sauce, black beans, zucchini and red bell pepper. Sprinkle cheese over top.
4. Bake for 30 minutes.
