I am so excited about Ideal fit new protein powder White Chocolate Peppermint, since it is Christmas time. I really wanted to make a family friendly cupcake that even your kids would enjoy. Believe me when I say this cupcake was approved by my niece and she is the pickest
eater. I hope you all enjoy the holiday season.
INGREDIENTS
28g almond flour
2 scoops vanilla protein powder
16g sugar free white chocolate jello pudding
1/2 cup baking stevia
243g egg whites
8oz unsweetened almond milk
1/4 tsp peppermint extract
2 tsp baking powder
1/4 tsp salt
30g white chocolate chips
DIRECTIONS
1. Preheat oven to 350 degrees. Place muffin liners in a muffin tin or spray with non-stick cooking spray.
2. In a medium size mixing bowl, mix together almond flour, coconut flour, jello pudding, protein powder, baking powder and salt. Set aside.
3. In a large mixing bowl or kitchen aid mix together egg whites, almond milk, peppermint extract and baking stevia.
4. Add dry ingredients to wet ingredients and mix well. Fold in chocolate chips.
5. Fill the muffin tin liners equally.
6. Bake for 18-20 minutes or until tooth pick comes out clean.
WHIPPED CREAM FROSTING
INGREDENTS
8oz heavy whipping cream
1/2 scoop vanilla protein powder
16g sugar free white chocolate jello pudding
1/4 cup baking stevia
4g crushed peppermint
DIRECTIONS
1. Place all ingredients besides crushed peppermint in a kitchen aid mixing bowl. Turn mixer on high and mix for 3-4 minutes or until stiff peak forms.
2. Top cupcakes with whipped cream mixture and sprinkle with crushed peppermint.
3. Store in refrigerator.
